Wenzhou Fish Glue Jelly

Fish Glue Jelly is a Wenzhou specialty snack made from fish glue. The process involves boiling fish glue in water until it forms a thin paste, which naturally cools and solidifies into “jelly”. It is then cut into small cubes or thin strips and seasoned with soy sauce, MSG, rice vinegar, and sesame oil before serving. It features translucent appearance and a refreshing taste.

Wenzhou Stir-fried Rice Noodles

Wenzhou Stir-Fried Rice Noodles vary across different regions of Wenzhou. In the downtown of Wenzhou, the traditional style of stir-fried rice noodles are made of medium-thick rice noodles, along with mung bean sprouts, onions, and shredded meat. In Pingyang County, thin rice noodles are used, with the most famous variety being Wushizhang Noodles, combined with shredded cabbage, eggs, and meat. In Yongjia County, thin noodles are also used, sometimes incorporated with seasonal vegetable and fruit shreds. In areas like Dajing and Yandang towns of Yueqing City, various types of seafood, like dried shrimps, oysters and eel are added.

Tengjiao Spiced Dried Tofu

Tengjiao Spiced Dried Tofu making technique has a a history of over a hundred years. The process involves more than ten steps, starting from soaking soybeans, grinding, boiling, filtering, shaping, extruding, and then hand-pressing and wrapping, and finally seasoning. The end result is a delightful golden-brown dried tofu with a unique five-spice flavor. It boasts a light and non-greasy aroma, a delicious taste, a chewy texture, and a satisfying bite.

Qingjiang Seafood Noodles

Qingjiang Seafood Noodles is a local specialty cuisine originating from Qingjiang Town of Yueqing City. Situated near Yueqing Bay, the town is abundant in fresh seafood. In every bowl of the noodles, you can find three or more types of seafood, such as white shrimps, oysters, razor clams, small yellow croakers, and even a whole green crab. The savory broth and fresh seafood give the noodles a unique flavor.

Cat’s Ear (Sweet Potato Starch Dumpling)

“Cat’s Ear” is one of the oldest and most distinctive snacks in Dongtou District. It’s a kind of dumpling, triangle-shaped, resembles a cat’s ear, hence the name “Cat’s Ears”. The dumpling wraps are made of sweet potato starch, filled with ground peanut, sesame, and refined sugar for a sweet taste, or with minced pork and shrimp meat for a salty taste. It features slightly chewy outer layer and crispy and delicious fillings. Whether sweet or salty, it leaves a satisfying aftertaste.

Hand-pulled Noodles with Ginger and Yellow Rice Wine

Wenzhou hand-pulled noodles are incredibly fine, resembling strands of hair with a subtle hint of saltiness. Once cooked, a bowl of typical Wenzhou hand-pulled noodles is served in a broth of yellow rice wine, accompanied by toppings like dried shrimp, mushrooms, shredded meat, and spinach, and completed with a lustrous golden fried egg.

Wenzhou Glutinous Rice

Wenzhou Glutinous Rice, commonly known as Chuifan (steamed rice), is a beloved breakfast option for many people in Wenzhou. It’s perfectly steamed glutinous rice, topped with crumbled youtiao (deep-fried dough stick), and generously drizzled with a savory broth of mushroom and minced meat. It is typically accompanied by a bowl of savory or sweet tofu pudding or soy milk.

Wenzhou Fish Ball

As early as 1998, Wenzhou Fish Ball was inscribed on the “Chinese Famous Snacks List” by the Certification Committee of Chinese Brands (CCCB). It is made from fresh fish meat. The process involves removing fish bones, cutting fish meat into fine strips or mincing it into a paste, marinating them/it briefly with yellow rice wine, salt, MSG, and ginger slices, and adding starch. The mixture is kneaded by hand until it becomes elastic. The fish mixture is then shaped into irregular lumps and boiled in simmering water until they float. The resulting fish balls have an irregular shape and appear as semi-transparent white jade. They are served in a bowl with the original fish ball broth, a touch of pepper powder, and a dash of rice vinegar. Delicious fish ball soup leaves you a lasting impression.

Wenzhou Wonton

The distinguishing feature of Wenzhou Wonton lies in its paper-thin skin and the use of fresh pork leg meat for the filling. The broth is typically prepared with ingredients like seaweed, pickled mustard greens, shredded omelet, blanched minced pork, mushrooms, spinach, dried shrimp, and spring onions. The soup is clear and refreshing while the wonton is tender and tasty.
