Wenzhou Pot-stewed Food

Pot-stewed Food is one of the favourite cold dishes for Wenzhou people. Marinate the raw materials, such as meat, offal, soy bean products and so on, in soy sauce, sugar and spices, and then pot-stew them.

Wenzhou Roast Goose

Wenzhou Roast Goose is a traditional delicacy, crispy and tender. The whole goose is marinated with seasoning, then roasted until it is golden brown. Cut it into pieces before serving.

Pickled Chinese Turnip

Pickled Chinese Turnip, or " Chinese Turnip kimchi", is a unique cold dish to Wenzhou people for it is mainly grown in the southern part of Zhejiang province. The fresh turnip is pickled as a whole, though it has dozens of criss-cross cuts, it stays connected. As white as jade, the pickled turnip is torn into pieces by hand, seasoned with soy sauce, sugar, gourmet powder, and sesame oil, and it tastes crispy and refreshing.

Straw-bound galantine boneless Mutton shank

Rui’an Straw-bound galantine boneless Mutton shank is one of the most common cold dishes in Rui'an. Debone the resh mutton,  bundle it into a cylindrical shape shank with straw, marinate it with seasoning and pot-stew it, slice it when serving. It’s very tasty with the mixed aroma of mutton, straw and seasoning.

Dried Eel

The water area of Dongtou District of Wenzhou is rich in eels. Every family prepares the dried eel for the Spring Festival, for it’s a must among the cold dishes of the dinner when people gather to celebrate the festival.The top-quality dried eel is usually processed after the winter solstice. Rip open and clean the eel, then sun-dry it. Steam it and slice it when serving. Dip it in Wenzhou special seasoning "soy sauce and vinegar", and you will find it very delicious.

Hijiki With Sauce

Hijiki, or sea barley, belongs to the warm temperate zone seaweed of the Sargassum family. Being thick, juicy and nutritious, it is not only food, but also a traditional Chinese medicinal material, enjoying the reputation of "sea ginseng".

Yongqiang Sandworm Aspic

Sandworm is a kind of mollusk that lives in the tidal flats. It contains natural gum, rich collagen and nutrition. "Sandworm Aspic" is a special cold dish in Yongqiang, Wenzhou. When you eat it, it melts and fills your mouth with fresh juice of original flavour.

Wenzhou Marinated Raw Crab

Marinated Raw Crab is the most representative cold dish of Wenzhou. Scrub the live crab, cut it into small pieces, add ginger, soy sauce, vinegar, sugar, pepper and other seasonings.Wait for a while then you can enjoy it. Just suck it gently with your mouth, and the crab flesh will come out of the shell and slide into your mouth like jelly, smooth and fresh.

Wenzhou sauced Duck Tongue

Sauced duck tongue, a traditional Wenzhou specialty, can be served as a cold dish at banquets or as a snack. The flesh surrounding the bone is slightly chewy, fatty without being greasy. An old Wenzhou saying goes that "there is no banquet without sauced duck tongue".

Wenzhou Fish Cake

Wenzhou Fish Cake is a traditional folk specialty. It is made of fresh sea fish, such as catfish and mackerel from the East China Sea as main ingredients, with a little diced fat meat and seasonings. It’s  tender and nutritious, suitable for all ages.
